Job Description:
Title: Chef Cuisine: Authentic Puebla Responsibilities: 1. All
kitchen operations including purchasing, inventory management, prep
lists, preparation, plating, and delivery to the customer 2. Update
and continuously improve the menu to be authentic Puebla cuisine 3.
Successfully manage food costs, storage, rotation, quality, taste,
and appearance with zero spoilage 4. Successfully implement and
manage the "Farm to Table" initiative 5. Motivate, and mentor
kitchen staff to produce only 4.8-5.0 star ratings 6. Exceed
compliance with all applicable health and safety codes and
regulations and ensure the health and safety certification of the
property, self, and staff 10. Establish and execute maintenance and
cleaning schedules for equipment, storage, and work areas 11.
Interview, vet, select, and onboard the best kitchen staff 12.
Develop and implement kitchen recipes, policies, procedures, work
duties, and flow, and regularly update Requirements: 1. Culinary
degree/certification preferred 2. Proven knowledge and proven
results in Pubela cuisine 3. 3-5 years experience in high-volume
kitchens 4. Proven menu development and recipe development results
5. Proven leadership, motivation, mentoring, and training of
kitchen staff results 6. Understanding of culinary trends 7.
Practice excellent health and safety requirements 8. Superb
knife-handling skills 9. Applied wine, beer, and beverage knowledge
